Festive Irish Leprechaun Stew

Celebrate St. Patrick’s Day this March 17th with this festive stew. It is perfect for leftover meat. Save all your pork and beef roasts and prepare my Irish mother’s recipe.

Ingredients

1lb of stew meat beef, pork or both
1 med. onion chopped
2-3 celery stalks chopped
2 carrots sliced
1 pkg mushrooms
14 oz can tomatoes
2 red skin potatoes chopped
½ cup peas & green beans
1 large can beef broth
1 bell pepper sliced
1½ tbsp Worcestershire
1 clove garlic
½ c flour
1 tsp thyme
1 tsp rosemary
1 bay leaf
1 tbsp salt or to taste
½ tsp pepper
½ c red wine
2 tbsp oil

Directions

Place meat in plastic with flour and shake to coat. (if needed)
Place 1 tbsp oil in frying pan add meat and brown (if needed) or place in large pot on med heat. Add bay leaf thyme rosemary salt & pepper add broth and wine and simmer.

Meanwhile, heat oil in frying pan and cook celery, bell pepper and carrots for about 5 mins, add onion and mushrooms cook another 5 mins add garlic the last 45 seconds. Add to pot peas, green beans, tomatoes and red potatoes let simmer and stir often
Cook 2 – 3 hours or longer, remove bay leaf.
Enjoy with biscuits!
