Cheesy Beef Macaroni Goulash
1 lb. ground beef
1 onion, finely chopped
1 tsp. salt
½ tsp. black pepper
1 tsp. garlic powder
1 can (14 ½ oz) diced tomatoes with green peppers, celery and onions, undrained
1 ¼ cups elbow macaroni (uncooked)
1 ½ cup shredded sharp Cheddar cheese
Brown meat and onion in large skillet, then drain. Add undrained tomatoes, salt, pepper, garlic powder and one cup of water. Bring to a boil. Stir in uncooked macaroni, cover and simmer for 10 to 15 minutes or until macaroni is cooked and liquid is absorbed. Remove from heat and stir in cheese until melted.
Ground turkey can be substituted for beef
1 tsp. dried red pepper flakes can be added if you prefer a little heat
