Blueberry Buckle
An old family favorite

This is one of my favorite recipes for many reasons. It can be made with fresh or frozen blueberries. It is tasty warm or cold. When I take the recipe card out of the box, I see my mother’s handwriting and am reminded of when she made the cake.

Ingredients

2 c reg flour
½ tsp salt
3 tsp baking powder
½ c shortening
½ c sugar (rounded)
2 eggs beaten
½ c milk
2 tsp lemon juice
2 cups blueberries
¼ c flour

Topping:
1/3 c sugar

1/3 cup flour
½ tsp cinnamon
¼ cup butter cut in

Directions

Thoroughly cream shortening and 3/4 cup sugar. Add beaten eggs and beat until light and fluffy.
Sift together flour, baking powder, and salt and add to creamed mixture, alternately with milk.
After rinsing blueberries and shaking off excess water, place in a bowl and sprinkle with 1/8 cup of flour and coat. Lightly toss into the mixture with a spoon.
Spread in greased (or Pam coated) 11x7x1-1/2” or 8x8x2” pan. I like to use glass so I can make sure the edge isn’t getting too brown.
Mix topping ingredients and sprinkle over mixture in pan.
Bake in preheated 350 Degree oven for 45 minutes
