Best Classic Lasagna

January is a time of new beginnings. It is also a time for traditions. This traditional lasagna recipe was handed down to me from my Italian friends and family. It is great on a cold or dreary winter day and served with Italian bread, it just can't be beat!!

Ingredients

1 lb dry lasagna noodles
1 lb ground beef (optional)
1 lb ricotta cheese
1 lb shredded mozzarella cheese
1 cup parmesan cheese
2 eggs
2 cans or jars of spaghetti sauce (I like Hunts Traditional or Newman’s Sockarooni)
1 large, deep pan (I use half a turkey roaster)

Directions

Prep time 35 minutes, Bake 1 hour

  • Prepare lasagna noodles as stated on box
  • While noodles are boiling, brown beef into small crumbles
  • In a large bowl, mix eggs into ricotta cheese
  • Drain noodles and put back in pan and cover with cold water (this makes noodles cool enough to handle)
  • Place a thin layer of sauce in the bottom of the pan
  • Place a layer of noodles to cover bottom (shaking off excess water)
  • Put another layer of sauce over noodles
  • Spoon half ricotta mixture onto sauce and then half of mozzarella cheese
  • Add ½ beef at this point
  • Shake one third parmesan cheese next, covering all
  • Add another layer of noodles and repeat above steps
  • Finish off with a layer of noodles, sauce and parmesan
  • Cover with foil and place in preheated 350 degree oven for 1 hour
  • Vent foil with holes cut onto top to let off steam
  • Insert knife into center to check doneness. It should be hot and bubbly
  • Reduce heat to 325 degrees and cook a little longer if necessary
  • Let sit 20 minutes before serving

Variations

Omit meat for a vegetarian dish
Precooked spinach may be added in place of meat
